2 Gold Coast students aspiring to be future leaders have been appointed to their new roles in the 2025 City of Gold Coast Junior Council Executive Committee. Aiden Yi from Somerset College has been announced as this year’s Junior Mayor while Oscar De Jersey from Hillcrest Christian College will take on the role of Deputy Junior Mayor. A further five students make up this year’s Junior Council Executive Committee. Acting Mayor Donna Gates congratulated the students on taking their positions. “The Junior Council is an important program which helps the City learn more about what is important for our younger citizens,” Acting Mayor Gates said. “It also provides our secondary schools students a platform and an opportunity to connect with local government and discuss current community issues. “This program is also an important opportunity for the students to learn about the role of local government, develop skills in public speaking, networking, and leadership. Students are given the opportunity to build on their understanding of active citizenship and the important role they play as members of the community.” The Junior Council program is a two-year civic leadership initiative which involves 150 Year 10 and 11 students from 40 Gold Coast high schools. The Junior Council is led by the Junior Mayor, Deputy Junior Council Executive Committee appointed to their new roles Junior Mayor, and the Junior Council Executive Committee. 11 THE Rotary Club of OrmeauPimpama has welcomed news of an announcement by Councillor Mark Hammel at a recent club business meeting that the City of Gold Coast will consider a capital contribution towards making the construction of a PCYC facility in Pimpama a commitment from all three levels of government. Cr Hammel, who has been a driving force with the Pimpama PCYC initiative, has sought available land within the northern Gold Coast region, and tabled an extensive set of building plans and renders of the proposed facility on the PimpamaJacobs Well Road site opposite Pimpama City Shopping Centre. Rotary has welcomed the news, having championed the cause for the past six years. The club has supported the ongoing advocacy and drive of the LNP’s State Member for Coomera, Michael Crandon, who started the campaign to establish a youth centre in the Ormeau- Pimpama area more than a decade ago. The State Government has previously announced it had budgeted $10 million for the facility. Federal member for Fadden, Cameron Caldwell, has also announced his support for the project by pledging a further $10 million should the LNP be elected at the upcoming Federal election. Mr Caldwell is currently also running a petition seeking support for the PCYC Rotary Club of Ormeau-Pimpama Rotary Ormeau-Pimpama calls on all parties to commit to funding ‘shovel ready’ Pimpama PCYC at upcoming Federal election facility at Pimpama, campaigning on the need for early intervention programs to combat the Gold Coast’s growing youth crime crisis. The estimated construction cost of a PCYC at Pimpama is $30 million. Rotary Ormeau-Pimpama President Mike Mellare has said joint support from the local, state and federal governments would see the PCYC become a reality. “Given the project has reached the stage of being ‘shovel ready’, Rotary is calling on both political sides of the federal government to commit to funding the Pimpama PCYC as a key election issue in the upcoming federal election,” he said. “The plans and artist renders show the overall use of the facility and the asset that it will deliver to the community. As well as being pleasing in appearance, importantly it is a real step forward by providing a healthier, safer and more connected venue for the development of youth in the northern Gold Coast community. “The proposed 3500sqm architecturally designed club will support community safety and encourage an active lifestyle, providing several benefits to the local and surrounding area, including a gym, multi-purpose youth facilities, and boxing, martial arts and gymnastics areas, “The site is easy to access by bus and train networks, which is critical in this growing community of more than 170,000 people, of which more than 30,000 are under 19 years old.” We extend an invitation to you to join us in having fun whilst making a difference in our community. 13 Coconut rice with pears and coconut-caramel sauce • 60g butter • 70g (1/3 cup, firmly packed) brown sugar • 2 William Bartlett pears, peeled, quartered, cored, halved lengthways • 80ml (1/3 cup) light coconut milk • Ground cinnamon, to dust COCONUT RICE • 400ml light coconut milk • 400ml reduced-fat milk • 70g (1/3 cup) caster sugar • 110g (1/2 cup) white long-grain rice PEARS are in season! Pear, walnut and Brie salad This simple salad is perfect with roast chicken for dinner or on its own for a nutritious, colourful lunch. • 2 tbs red wine vinegar • 2 tbs olive oil • 2 tbs walnut oil • 200g mixed salad leaves • 1/3 cup toasted walnuts • 1 pear, sliced into thin wedges • 8 thin prosciutto slices, torn • 200g Brie, cut into slices To make the coconut rice, place the coconut milk, milk and caster sugar in a saucepan over medium heat. Bring to the boil. Stir in the rice and cover. Reduce heat to low. Cook, stirring occasionally, for 40 minutes or until the rice is tender and the mixture is creamy. Set aside, covered, for 30 minutes to cool. Transfer the coconut rice to a bowl. Cover with plastic wrap and place in the fridge to chill. Heat the butter in a large frying pan over medium heat. Stir in the brown sugar. Add the pear and cook, turning occasionally, for 4 minutes or until the sauce is golden and the pear is tender and light golden. Remove from heat. Carefully stir in the coconut milk. Divide the coconut rice among serving bowls. Top with the pear and drizzle over the sauce.
