The first 24 km section opened in the Tweed on 1 March 2023 (stretching from Murwillumbah to Crabbes Creek). Since opening, the Tweed section of the Rail Trail has welcomed more than 146,000 users including locals, domestic and international visitors. The second section from Casino to Bentley in the Richmond Valley is 13.4 km and opened in March 2024 and the 16.3 km section from Lismore to Bentley is now also open. Eventually the Rail Trail will connect with Byron and Lismore and will be 132 km long. The Rail Trail is free to use and provides a safe environment for walkers, cyclists and people of all abilities to explore the beautiful Northern Rivers region. The Tweed section of the Northern Rivers Rail Trail is a remarkable showcase of how visionary projects can breathe new life into regional spaces. Spanning 24 kilometres from Murwillumbah to Crabbes Creek, this stretch is the first completed section of the broader rail trail project, setting the standard for its future development. This section traverses stunning landscapes, including lush farmland, rainforest pockets, and charming villages. Along the way, it offers breathtaking views of the Tweed Valley and the iconic Wollumbin (Mount Warning), creating an immersive experience that highlights the natural beauty and cultural significance of the region. Cover and refrigerate while preparing sweet potato fries. Cut sweet potato into approximately 10 cm-long x 1½ cm-thick fries. Pat dry with paper towel or a clean tea towel. Transfer to a large bowl. Add remaining oregano and oil. Season with pepper. Toss well to coat. Line a large baking tray with baking paper. Spread fries over prepared tray. Bake in a 220 °C preheated oven for 20-25 minutes, until crisp and golden. Meanwhile, heat a large nonstick frying pan or barbecue over medium-high heat. Add chicken. Cook, turning occasionally, for 6-8 minutes, until golden brown and cooked through. Transfer to a plate, cover loosely with foil and rest for 5 minutes. Meanwhile, toss tomato, cucumber, onion, olives and feta in a bowl. Divide lettuce, tomato salad, chicken and fries among 4 wide, shallow bowls. Top with tzatziki. Serve with lemon wedges. TIPS: • Chicken can be marinated in the fridge overnight. • Tomato salad can be made up to 3 hours ahead. Keep covered in the fridge until ready to serve.
