Eating on your own needn't mean beans on toast or a bowl of ice cream for dessert... check out these easy recipes to make cooking for one delicious! ~ Cooking for One ~ Flattened chicken with tomatoes, olives & capers • 1 boneless, skinless chicken breast • a little seasoned flour, for dusting • 1 tbsp olive oil • 1 large ripe tomato, chopped • 2 tsp capers • handful olives • splash white wine (or water, if you prefer) • chopped chives or parsley Split the chicken breast almost in half and open it out like a book. Bash with a rolling pin to flatten, then lightly coat in the seasoned flour. Heat the oil in a pan, add the chicken and cook for 3-4 mins on each side until crisp, browned and cooked through. Remove from the pan and keep warm. Add the tomato, capers, olives and wine to the pan, season to taste, then bring to the boil. Bubble the sauce for 2-3 mins until the tomatoes are starting to break down, then spoon over the chicken and scatter with chopped herbs. Delicious with steamed potatoes. Toss together vege pasta Berry Cobbler • 2 tsp sugar • ¾ cup of fresh or frozen blueberries • 1 tbsp unsweetened shredded coconut • 1½ tbsp almond meal or plain flour • 1 tsp unsweetened applesauce • pinch salt • splash vanilla extract • sweetener to taste Preheat oven to 200C. In a small skillet or frypan melt sugar over medium heat. When completely dissolved (about 1 min), add blueberries and cook, stirring frequently for about 3 to 4 mins or until berries are liquidy but still retain some of their shape. Remove from heat. Meanwhile, combine coconut, almond meal, applesauce, salt, vanilla extract and sweetener in a small bowl and mix well. Applesauce should coat other ingredients so they stick together but aren’t too moist. Place blueberry mixture in a small greased ramekin (about 200ml) and sprinkle coconut mixture in small bits over top. Bake for about 20 mins or until top is cooked, crisp and slightly browned. Let cool. • ½ cup spiral pasta • ½ small can four bean mix • ½ small can corn • ½ small tub fresh napoli sauce • shaved parmesan to serve • torn fresh basil leaves to serve • green salad to serve Cook pasta according to packet instructions. Drain and return to pan and add beans and corn. Heat sauce over medium heat. Add sauce to pasta and toss until well combined. Top with parmesan and basil, serve with green salad.
